You can get the Dragon-Hunter’s Great Katana in Elden Ring by defeating the Ancient Dragon-Man boss in the deepest level of the Dragon’s Pit cave. You can reach the cave by first following the road right of the Castle Front Site of Grace until you reach the Pillar Path Waypoint one. The site will be located by a path marked by dragon statues. I recommend caution when first treading the road right of the Pillar Path Waypoint Site of Grace. The reason for that lies in how once in it, you will be invaded by the red phantom of the Ancient Dragon-Man. The enemy will use the same movements as the boss but will have way less health. To deal with it, rely on either big hits or fast dual weapon combos. I also recommend that you make use of the environment to avoid his Incantations.

Unfortunately for all using Arcane, Intelligence, and Faith builds, it is also not possible to infuse it with alternative properties.
