Last month, we brought together chefs from across the company for hands-on training at Niagara Falls Culinary Institute (SUNY Niagara) to prepare them to earn ProChef® I certifications at The Culinary Institute of America in Hyde Park, N.Y. The group of culinarians – six executive chef mentors and one emerging culinarian – are part of Delaware North’s industry-leading Culinary & Hospitality Excellence for Future Success (CHEFS)® program. The CHEFS program prepares emerging culinarians to earn ProChef certifications through 12 months of curriculum emphasizing mentorship, professional development and culinary proficiencies. As proud partners of the Los Angeles County Museum of Art (LACMA), our team was thrilled to recently host an exclusive culinary event inspired by the museum's latest major international exhibition, "Dining with the Sultan: The Fine Art of Feasting." This curated experience allowed over 40 guests to savor a multicourse meal that beautifully complemented the exhibition, a first of its kind which showcases Islamic art through the lens of its associated culinary traditions. The Patina Restaurant Group culinary team collaborated with Daniel Newman, chair and professor of Arabic studies at the University of Durham in the United Kingdom, to create dishes inspired by recipes from 9th century Baghdad, 13th century Andalusia and 15th century Cairo. “The event was a rare and exciting opportunity for our team to explore food through a highly focused historical lens,” said Nathan Washburn, executive chef of Ray’s and Stark Bar at LACMA. “Through the spirited guidance of Professor Daniel Newman, we were introduced to a style of service and vivid spectrum of ingredients that fully expressed the crossroads of antiquity, opulence and service. It was truly memorable to bring this unique and profound exhibit to life.”
