In terms of difficulty level, is Gran Turismo 6 is as easy as Super Mario Kart from Super Nintendo.

The last racing game I have played is Super Mario Kart and the Nascar 15 demo. I found the Nascar 15 demo too hard to get first place in, and I am really good at Super Mario Kart.

From a difficulty level perspective, how is Gran Turismo 6?

Depends. It does a great job at teaching players how to play, and it does have a lot of assists to help you out. It also doesn't have any difficulty levels, and usually allows you to use cars that are quite a bit better than your competition.

But it's also incredibly demanding without using the assists, and ers very much on the simulation side of things.

lol played a demo as your experience. However, GT6 is way harder. If you know how to drive properly it isn't that difficult, but there are so many cars there is definitely going to be a few that give you some trouble.
