I encountered this with the previous UFC game, the AI for CAF's seem to be pretty crap if you are anything other than a striker. I like for my fighter to play well as a CPU opponent for when someone else might play against him (cousin, friends, etc.)
For instance, I have my light heavyweight set to do clinch cage throws to setup submissions. My submission rating is 98 with an overall of 98 as well. I ran 20 cpu. vs. cpu. matches against different opponents. He performed maybe 6-9 submissions per match, which is all good, except he didnt EVER pull off a victory due to submission. Not once.
Am I in some weird paradox or is this happening for others? I know most people dont watch AI matches but I do sometimes when Im eating or whatever, just to pass time.
