To return the pass for a touchdown you'll mostly be looking for a short throw towards the sidelines, or a screen pass to the running back. In this event it is very easy to run down the sidelines as your speedy cornerbacks and get the score - if you've minimized the speed and acceleration of the opposing team there's no way they will be able to catch you.

Two Controller Method: Using two controllers makes this one a little easier, but there's not really a reason to as it should be simple enough already. As the offensive team, select a short throw that has either a pass to the running back or a short pass to the sidelines (curl routes are great here.) After the snap, tap the button of the receiver best covered by the defense to lob the pass, and hopefully the cornerback will be able to intercept it. From there use the other controller to guide your player to the end zone and unlock the trophy.
